Vegetable Jalfrezi
Serves: 6 people.
Preparation Time: 20 minutes.
Cooking Time: 30 minutes.
Ingredients
1 large Onions
2 whole green peppers
2 large tomato
1/2 lbs broccoli
1/2 lbs cauliflower
4 tablespoon butter
1/2 teaspoon turmeric (haldi)
1 inch piece fresh ginger
3 cloves garlic
2 tablespoon vinegar, white
2 tablespoon tomato puree
Instructions
Chop onion; cut green peppers, tomatoes, broccoli, and cauliflower into 1 in. cubes.
Melt butter and saut‚ onion.
Add all the remaining vegetables and stir-fry for about 5 minutes over medium heat. A
dd the spices and vinegar.
Stir in the tomato puree, and simmer for about 5 minutes.
Season to taste with salt and fresh-ground pepper.
